BustOut! Spring Elimination

Breakfast - Eating For Energy

Have you ever given much thought to the fact that the vast majority of us begin our day with dessert? Really, most all commercial cereals, pastries of numerous variety, white toast, bagels, pancakes and waffles, sugary yogurts, large glasses of juice = a major dose of sugar! The food that we start our day with sets us up for how we are going to feel and eat for the rest of the day. When our children "break" their "fast" with sugar rather than multiple whole food sources, how far do you think they will get before they crash? Lentils, veggies, broth & spices... Soup!


I had no idea what I was going to eat tonight. The rest of the family opted for takeout; with my gluten "thing," sans gluten AND healthy takeout options are... sparse. So, I dusted off the recipe development part of my brain this evening and came up with a beaut!

Basic Lentil Soup - From the Hip

Ingredients

  • Drizzle extra virgin olive oil
    1 small red onion finely chopped
    1 large carrot diced
    3 celery stalks & leaves sliced1 garlic clove finely chopped
    5 kale leaves & stalks chopped
    1 can diced tomatoes
    Splash or so of what ever wine on hand
    2 tsp. ground cumin
    1 tsp. turmeric
    1/2 tsp. ground cinnamon
    1/2 tsp. red pepper flakes
    freshly grated nutmeg to taste
    1/2 cup yellow lentils rinsed
    1/2 cup green lentils rinsed
    Salt
    Ground pepper
    4 cups vegetable broth

    Drizzle oil in heavy bottomed pan, add onion & saute for few minutes & then add the carrots & celery. Saute until tender - up to 10 minutes. Add garlic & saute until fragrant. Add Kale. Add wine & can of tomatoes - stir together. Add each spice & stir & cook until you can smell the spices. Add lentils. Salt & pepper between each addition. Bring initially to boil & then turn down to simmer around 45 minutes until lentils are soft. Take 1 cup of the soup & puree in a blender; add back to the soup. Ladle to a bowl, drizzle with olive oil & serve!
